This is a quick stand-by meal in our house. I usually get a big piece of pork loin which I then cut to to size. This dish works the same with pork chops. After putting some salt and pepper on the meat I place it in my table top convection oven (sometimes these are also referred to as “Turbo Oven”), set the temperature to 500 F and the timer to 20 minutes. At 20 minutes I turn the meat around and run it for another 15 minutes (times work for the thickness of the meat shown in the pics). The meat comes out nice and juicy on the inside. The outside is brown and even a little crisp.
Here I served it with some sauerkraut which I enhanced a little by adding some onions and apples.
