Waffles are fun. I wanted a healthy, savory snack ;). This is my first experimentation with these waffles.
Here is the recipe, it’s an adaptation of something I found somewhere searching for coconut flour waffles. It’s pretty standard.
2 eggs + 1 egg white
2 tbs coconut oil
1/2 cup coconut flour
1/4 tsp baking powder
1/4 tsp baking soda
pinch of salt
sweetener (to taste, not much for me)
What I added to make these really great: finely chopped Kelbasa! (looking closely you can make out some pieces in the pic), some chives, chia seeds.
I also made some where I added cheese.
