Figs with Almonds

This is a simple, nutritious snack. Just get some dried figs (most health/whole food stores carry them) and some almonds. Cut the figs open, taken care not to completely cut it, and stick some almonds in the opening. Of course this works with other nuts also.

Here is a picture from the Spice Market in Istanbul where I saw this kind of snack among many other goodies.

Amaretto Apple

Amaretto Apples

There still plenty of apples on our little tree, so I’m looking for new apple recipes. This one is quite simple, but very tasty!

Cut the apples into small wedges and peel. Squeeze some lemon juice on top and pan fry the apples in a little butter until they are caramelized. To finish this dessert pour some Amaretto syrup over the apples while the pan is still on the stove and let the syrup reduce a little. Before serving poor a little bit of cream over the apples.

Serve by itself or on sponge or pound cake.

Apple Cake

Our little apple tree is loaded this year, so we are bringing back all the good old traditional apple recipes:

Apple Juice: Very small apples and some of those that have fallen off the tree go right into the juicer after some washing and coring.

Apple Sauce: As an alternative to the juice some apples get processed into apple sauce. They are peeled, cored, boiled and then put through a strainer.

Apple Cake:
500g flour (I used whole wheat this time)
2 tsp dried yeast
75g sugar
1 pkt vanilla sugar
salt
250 ml lukewarm milk
75-100 g melted, cooled butter

Add flour and yeast in mixing bowl and mix carefully. Then add the other ingredients.

Mix the ingredients with an electric mixer at a low setting first, then knead for 5 min. Cover dough and leave to rise in warm place. Remove the dough when well risen and knead on the work surface.
I actually used our breadmaker in the dough cycle for the mixing and rising.

Roll out dough on greased baking sheet. Place apple slices on top. Bake at 225 C (437F) for 15-20 minutes.

Fresh orange with spiced syrup

A nice light dessert based on a recipe I saw in a Mediterranean cookbook years ago.

Oranges: Peel and section oranges
Syrup: About 1 cup sugar, 1 cardamom pod, 3 cloves, a 4-5 peppercorns (crushed), tea spun of rose water, 1 cup of water. Dissolve the sugar in half of the water and mix all the spices in. Next boil the mixture until it thickens and is caramelized. Then carefully add the remaining water and dissolve the caramel to create the syrup.

Arrange the orange wedges on a dessert plate and pour some of the syrup over it. Sprinkle some pistachio nuts on top.
